This pork meatball appetizer is delicious. We always love a good appetizer recipe.  Earlier this year, Skip to my Lou participated in the Kansas #FarmFoodTour taking a 3 day trip around Kansas visiting farms and ranches. On the first day of the trip the group was treated to the MOST delicious pork meatballs prepared at the home on Craig and Amy Good on their farm. You simply must try this recipe! Ground Pork Meatballs with Gorgonzola on Greens

1 lb. ground pork

2 T ranch dip mix

2 T grated parmesan cheese

1 large egg

2 T chopped fresh chives (extra for garnish if desired)

2 T fresh lemon zest

1/4 cup Italian seasoned bread crumbs

1/2 cup ranch dressing

1 cup plain panko crumbs

1 T grapeseed oil (can substitute extra virgin olive oil)

2 cups fresh baby spinach leaves

2 T crumbled gorgonzola, divided

Lemon slices for garnish

Directions:

Preheat oven to 425 F.

With your hands, mix the pork, ranch dip mix, parmesan, egg, chives, lemon zest, and Italian bread crumbs. Form into 8 even meatballs.

Roll the meatballs in the ranch dressing and then the panko crumbs, drizzle with oil and bake 25 min.

Place 1/4 cup spinach on each plate. Top with two meatballs. Crumble a small amount of gorgonzola over each plate and garnish with fresh chives and a lemon slice.
