Lemon Poppy Seed Sandwich Cookies By Sweet Treats & More

I’m flattered to be visiting Skip To My Lou Today! I’ve got the perfect spring treat for you. First of all, you must know I LOVE cookies. They are by far my favorite treat to make, and eat, ever ever ever! These Browned Butter Carrot Cake Cookies are a new favorite! But right now, I’m totally loving all things lemon. So I decided to throw a little fresh lemon flavor into cookies for you. These Lemon Poppy Seed Sandwich Cookies just scream Spring, don’t you think?
These sandwich cookies start with a cake mix so they are super easy to make! I love keeping things simple in the kitchen and have no problem taking short cuts every once and a while. I used a yellow cake mix for the cookies and just doctored it a little with fresh lemon juice, lemon zest and poppy seeds. You could also just buy a lemon cake mix, but if you have a yellow cake mix on hand, use it! To the cake mix you add a little oil and two eggs, that’s it.
The frosting is a simple cream cheese frosting with just a hint of lemon.
I love the punch of lemon citrus these sandwich cookies have! But I think I love how easy they are to make even more! I hope you enjoy!
Lemon Poppy Seed Sandwich Cookies
1 box yellow cake mix
1 tbs fresh lemon juice
1 1/2 tsp lemon zest
1 tsp poppy seeds
1/3 cup oil
4 ounces cream cheese, soft
4 tbs butter, soft
1 tsp lemon juice
3-4 cups powdered sugar
Preheat oven to 350.
In a large bowl mix cake mix, eggs, oil, lemon juice, lemon zest, and poppy seeds together until combined. Scoop by rounded tablespoons onto a baking sheet lined with parchment paper. Bake for about 10 minutes (do not let brown). Remove from oven and let cool.
For the frosting, beat cream cheese and butter together until smooth and creamy. Slowly mix in powdered sugar, then lemon juice. Beat until smooth. Add a little more powdered sugar if needed to get desired consistency.
Once cookies have cooled, spread a thick layer of frosting bewteen two cookies.
Makes about a dozen sandwich cookies.
