Junior Mints Brownies

1/4 cup butter
4 ounce box of Junior Mints
1 cup all purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
2/3 cups sugar
1/3 cup cocoa
2 eggs

Preheat oven to 350 degrees. Prepare 8 X 8″ or similar sized pan with cooking spray. Combine mints and butter in microwave safe bowl and heat for about 30 seconds or until soft. Do not cook, only heat. Stir until smooth. In another bowl mix together eggs, cocoa, vanilla and sugar. Next add in flour, baking soda and salt stir until just blended. Pour batter into prepared pan. Bake for about 20 mins or until a wooden pick inserted in center comes out clean. Cool before cutting.

  3. Baking as we speak! The directions are confusing though. You didn’t say how much vanilla and you don’t tell when to add the butter mixture. I had to add some rice milk because the batter was too thick. Hope they come out good!
