Instant Pot Honey Bourbon Chicken actually doesn’t have any bourbon.  The original Bourbon Chicken recipe was created by a chef on Bourbon Street in New Orleans. The honey and soy sauce alternative (coconut aminos) make a rich delicious sauce over the juicy bites of chicken.  We love this instant pot chicken recipe served over rice, but if you don’t eat rice it would be yummy over cauliflower rice. I am constantly amazing at how much the Instant Pot has changed dinner time for my family. No longer do I stress about what’s for supper!  It is easy to whip up last-minute meals with no planning. Instant Pot Honey Bourbon Chicken {Soy Free Gluten Free} Recipe Ingredients

  • 2 pounds Chicken, thighs or breast  Boneless/Skinless
  • olive oil
  • Salt black pepper
  • chopped Onion
  • 1 cup honey
  • coconut aminos (for soy & gluten free) or tamari (for gluten-free) or soy sauce
  • Ketchup
  • garlic cloves, minced
  • red pepper flakes

Instructions for making Honey Bourbon Chicken

  1. Cut chicken into 1 and 1/2 inch cubes.Cut chicken into pieces for the honey bourbon chicken
  2. Turn Instant Pot to saute. Brown chicken in olive oil. Brown chicken in the Insta Pot
  3. Turn Instant Pot off and add the remaining ingredient to the pot.add all ingredients to instant pot for the chicken bourbon chicken  
  4. Cook on high pressure for 10 minutes. cook honey bourbon chicken for 10 minutes

Instant Pot Honey Bourbon Chicken {Soy Free Gluten Free} Recipe

Prep Time 10 minutes
Cook Time 10 minutes

Equipment

  • 1 Pressure Cooker

Ingredients  

  • 2 pounds Chicken thighs or breast Boneless/Skinless, cut into 1 1/2 inch cubes
  • 2-3 teaspoons of olive oil
  • 1/4 teaspoons Salt
  • 1/4 teaspoons black pepper
  • ½ cup chopped Onion
  • 1 cup honey
  • ½ cup coconut aminos for soy & gluten free or tamari (for gluten-free) or soy sauce
  • ¼ cups Ketchup
  • 3 garlic cloves minced
  • ¼ – 1/2 teaspoon red pepper flakes

Instructions 

  • Turn Instant Pot to saute. Brown chicken in olive oil. Turn Instant Pot off and add remaining ingredient in the pot.  Cook on high pressure for 10 minutes. That is all it takes for a quick and easy meal.

  1. I just made the recipe using frozen chicken breasts and I am beyond impressed! I added some ginger paste and apple juice and didn’t use the full amount of honey. Rice is cooking on the stove right now. Can’t wait to dig in!

  2. Hi Lynn, I haven’t tried the pot in pot yet. I have two pots and as soon as the chicken is done I pull that pot out and put it on my stove, adding cornstarch to thicken the sauce if desired. While I am doing that my other pot was ready to go with rice. I just put it in and hit the rice setting (8 mins). Rice in the Instant Pot is different than stove top. 1 cup of rice take 1 1/2 cups liquid. Hope this helps.

  3. The Bourbon chicken looks great but there is no mention of the rice in your recipe even though the picture clearly shows it. If I do a pot in pot, do you know how much time to add to cook the rice?
