Pressure Cooker Chicken Enchilada Soup is another allergy friendly pressure cooker recipe. Depending on the toppings you choose this soup is dairy free, gluten free and soy free.  Be careful when selecting enchilada sauce and chicken broth.  Not all brands are gluten and dairy free. about 1 1/2 pounds chicken breasts, cut into 2 inch chunks

1 – 10 oz can red enchilada sauce

1 – 14oz can black beans, rinsed and drained

1 – 12 oz bag of frozen corn

1 small can diced green chiles

1 – 14oz can diced tomatoes, with juice

1 – 14oz can chicken broth

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon cumin

1 onion chopped

Toppings as desired

chopped cilantro

tortilla strips

sour cream

shredded cheese

avocado

Add all the ingredients to the pressure cooker. Cook 10 minutes at high pressure.  Release pressure. Shred chicken as needed. Serve with desired toppings.
