These chocolate no bake cookies have a twist that make them gluten free. Instead of oatmeal use Crips Rice Cereal (double check your brand to be sure it’s gluten free- especially barely malt a hidden source of gluten) . These are a soft delicious cookie with the perfect mix of peanut butter and chocolate. If you like a little more salty and sweet try these no bake corn chip cookies — super yummy!

Chocolate No-Bake Cookies

1 Cup sugar
1 Cup light corn syrup
1 Cup chocolate chips
1 Cup peanut butter
pinch of salt
1/2 teaspoon vanilla
2 Cups Rice Krispies

In a medium sauce pan bring the sugar and corn syrup to a boil. Boil for only 1 minute and remove from heat.  Stir in chocolate chips and  and peanut butter. Once melted and combined fold in rice krispies.

Drop by spoonfuls onto wax or parchment paper. Allow to cool completely.

  1. If you are making these for someone who needs it to be gluten-free, please make sure to purchase the gluten-free Rice Krispies, as the original version (in the blue box) has barley malt which contains gluten.

  2. Rice Krispies aren’t gluten free. They contain malt. Unless you use gluten free rice krispies.

  3. Just an FYI…not all Rice Krispies are gluten-free. If the box has malt listed as an ingredient it isn’t gluten-free. I have a son with celiac and have learned to read every label. And you can find gluten-free oats.

  4. Regular Rice Crispies have gluten from the malt (barley) in them. They do sell gluten free crispies.
