Here it is as I promised, my friend Tony’s Cajun Pickles Recipe. These are a must with his Fried Chicken Sliders with Spicy Mayo. Oh, how I love those little sliders with the creamy spicy mayo and the crunch of these delicious pickles. A great little sandwich.

Cajun Pickle Ingredients

With just a few simple ingredients you can make creole pickles at home.

  • 4-6 pickling cucumbers
  • 1 cup of vinegar
  • water
  • 2 tablespoons of Tony Chachere’s Lite Creole Seasoning
  • jalapeno pepper
  • 4 garlic cloves
  • dried onion flakes
  • 1 quart mason jar

What is the difference between Cajun and creole

The seasonings are actually slightly different. Cajun seasoning tends to have more spice. Most cajun seasonings will also have paprika added for color. Creole seasoning tends to have a sweeter spicy taste. While each differs slightly in ingredients, both typically contain onion powder, garlic powder, pepper, and salt for the base.

How to make Cajun Pickles

While these pickles use creole seasoning I still call them spicy cajun pickles because I add jalepeno to spice them up. Good news whether you call them creole pickles or cajun pickles they couldn’t be any easier to make! First, wash all produce. Leaving the peel on the cucumbers slice into 1/4 inch thick pieces. Put the fresh cucumber slices, the sliced garlic, and jalapeno slices in a quart mason jar until the jar is full.

In a saucepan on the stove, heat the vinegar, water, Creole seasoning, and onion flakes until the mixture is boiling. Place the mason jar with the cucumber slices in the sink and carefully pour the hot liquid mixture over the cucumbers until the jar is full of liquid. Let the jar stand until cool enough to place a lid on it and put it in the refrigerator.

The longer these marinate, the better they are so you may want to do these the night before!

Cajun Pickles

Spicy refrigerator pickles perfect for burgers, and sandwhiches.

Equipment

  • mason jar

Ingredients  

  • 4 – 6 fresh pickling cucumbers
  • 1 cup of vinegar
  • 3 cups of water
  • 2 tablespoons Tony Chachere's Lite Creole Seasoning
  • 1 fresh jalapeƱo pepper sliced
  • 4 garlic cloves sliced
  • 1 teaspoon dried onion flakes

Instructions 

  • Slice your cucumbers into 1/4 inch thick pieces.
    Put the fresh cucumber slices, the sliced garlic, and jalapeno slices in a quart mason jar until the jar is full.
    In a sauce pan on the stove, heat the vinegar, water, Creole seasoning and onion flakes until the mixture is boiling.
    Place the mason jar with the cucumber slices in the sink and carefully pour the hot liquid mixture over the cucumbers until the jar is full of liquid.
    Let the jar stand until cool enough to place a lid on it and put in the refrigerator.

Notes
