Apple Coffee Cake

Surprise Me!

This apple coffee cake is one of my go to recipes when we are having overnight guests. It can be baked a day ahead and served the next morning. It is also great with cherry pie filling! You might also like this overnight coffee cake,this amazing egg casserole or the world’s best quiche. Your house guests will feel totally pampered!

Apple Coffee Cake

1 1/2 cups sugar
1 cup butter
1/2 tsp baking powder
1 tsp vanilla extract
1/2 tsp almond extract
4 eggs
3 cups all-purpose flour
21 ozs canned apple pie filling
1 cup confectioners’ sugar
1 tbsp milk

Preheat oven to 350 degrees F. Spray an 11×15 inch jelly roll pan with cooking spray.

Beat sugar, butter, vanilla extract, almond extract & eggs on low until mixed well. Stir in flour.  Spread 2/3 of batter in pan. Spread pie filling evenly over batter. Drop the remaining batter evenly in dollops over pie filling. Bake until toothpick inserted in center comes out clean (about 45 minutes). Drizzle glaze over top while still warm.
