We love these banana muffins so much.  The original recipe came from my Grandma, over the years I’ve made a few changes to make them healthier- like reducing the fat by adding applesauce and replacing whole eggs with egg whites to reduce fat and cholesterol.  I promise you’ll never be able to tell the difference at all!
Then I don’t feel quite so guilty about adding in the chocolate chips… totally kidding!  The banana muffins are very good all on their own but those chocolate chips take them right over the top 🙂

Banana Chocolate Chip Muffins

Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup applesauce
  • 3/4 cup sugar
  • 2 whole eggs and 4 egg whites, room temperature (for lower fat/cholesterol or 4 whole eggs)
  • 2 2/3 cup flour
  • 2 tablespoon fresh lemon juice (about 1/2 a lemon)
  • 2 teaspoon baking soda
  • 4 overripe bananas (approx 2 cups)
  • 1 cup semi sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line muffins with paper liners or spray with cooking spray.
  3. In a large mixing bowl combine butter and sugar; mix 2-3 minutes until light and fluffy.
  4. Add eggs one at a time; mixing and scraping with each addition.
  5. Add applesauce, banana’s, lemon juice; mix until smooth.
  6. Add flour and baking soda; mix until 80% incorporated (do not over mix- a few lumps are fine)
  7. Gently fold in chocolate chips using a wooden spoon.
  8. Divide batter evenly into paper liners.
  9. Bake 18-22 minutes or until inserted toothpick removes clean.
  10. Remove from pan and cool on racks.
  11. Enjoy!

Banana Chocolate Chip Muffins will be a must have around your house and if you happen to have a few left hanging around, just toss them in a zip lock freezer bag and into the freezer.  They’ll keep great for 4-6 weeks plus then they’re right ready to go anytime!
