I am excited to be participating in Skip to My Lou’s Summer craft camp for the 6th year in a row (that makes me feel oddly old!). I decided to change things up a bit this year, and instead of sharing a craft like in year’s past, I’m sharing my newest kid-and-summer-and-diet-friendly-recipe obsession: homemade whole-fruit popsicles.

In years past, my kids (and I *cough*) have consumed a ton of those sugar-and-food-coloring popsicles. When it’s hot outside, they just feel SO GOOD. I almost bought a box of them for this summer until I remembered that I had a bunch of fruit at home, a blender, some popsicle sticks, and a ton of those tiny Dixie cups. I had everything I needed to make the kind of popsicles I want to encourage my kids to eat – the healthy, go-ahead-and-eat-two kind of popsicles.

I have already made two homemade popsicle varieties: watermelon-berry popsicles and piña colada popsicles. And this week, after scoring the best deal on mangoes I’ve seen in ages (and buying 6 of them), I made a third popsicle variety. And this might possibly be the best flavor yet.

Have I mentioned yet how simple homemade popsicles are to make? All you have to do is puree fresh fruits together (and sometimes some ice cubes or yogurt) and then freeze to enjoy later. You can’t find a snack that satisfies the sweet tooth better than this while still being so good for you.

Blueberry-Mango Popsicles

Ingredients:

  • 1 ripe mango, cut into chunks (size doesn’t matter too much, since we’re going to blending everything together soon)
  • 1/3 cup fresh or frozen blueberries
  • 1 container of Greek Yogurt (I used blueberry yogurt)
  • 6 ice cubes
  • 3 ounce paper cups
  • Popsicle sticks

Instructions:

  • Cut mangoes into chunks. Add mangoes chunks, blueberries, yogurt, and ice cubes into blender and puree.
  • Pour pureed fruit-yogurt mixture into 3 ounce paper cups and place in the freezer. After about 30 minutes, add popsicle sticks and return to freezer until frozen through (about 2 hours).
  • When ready to eat, simply rip paper cup off. If any of the paper cup sticks to the popsicle, rinse under cold water for a couple of seconds to remove paper.

Makes about 7 paper cup popsicles.

My kids and I are totally hooked and we can’t wait to try even more varieties and combinations of fruits. I love that they are so easy to make – easy enough for kids to do with minimal help from parents – and so much better than the stuff I used to buy!
