This Gingerbread Pancake recipe is a great way to celebrate pancake day!  Shrove Tuesday (known in some countries as Pancake Day) is a day in February or March, preceding Ash Wednesday(the first day of Lent), which is celebrated in some countries by consuming pancakes. Well at our house we love to consume pancakes. Here are some of our favorite pancake recipes: Healthy Whole Wheat and Flax Pancakes, Chocolate Pancakes, Cinnamon Shake and Pour Pancakes and Buttermilk Shake and pour pancakes. We especially like making smiley face pancakes!

Gingerbread Pancake Recipe

1 cup flour
2 teaspoons baking powder
1/2 tsp salt
1 tablespoon sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 large egg, lightly beaten
1 cup buttermilk
3 tablespoons butter, melted
1 tablespoon molasses

Mix dry ingredients together in a large bowl. Make a well in the center of the mixture. Add wet ingredients to the well and stir just until moistened. Spoon batter onto a greased skillet. Cook pancakes until tops are covered with bubbles and edges look cooked. Turn and cook other side. Recipe makes about a dozen pancakes.
