Are you grain free? These paleo brownies are for you. For almost two years now I have been eating paleo.  You can read why I made this choice and see one of my favorite make ahead breakfasts here. It has made a tremendous difference in the way I feel.  I do indulge in non paleo foods, but about 90% of the time I am eating paleo.

These brownies are fluffy, moist and cake like. Now, depending on where you are at in your paleo journey…they might not be sweet enough. Once your palate has adjusted to whole foods and natural sweets these brownies will be a perfect treat. I will be up front and let you know that my kids informed me their palates have not adjusted to these LOL. I on the other hand ate five!  No, they don’t taste like a box mix of gooey sugary sweet brownies. These paleo brownies are nourishing with a a nutty almond flavor and are not overly sweet.

Paleo Brownies

1 cup almond butter (I look for one that is only almonds, no added oil or cane sugars) (other nut butters could be substituted)
2 eggs
1/2 cup plus 2 Tablespoons honey
2 teaspoons vanilla extract
1/4 cup unsweetened cocoa powder
1/4 teaspoon Kosher salt
1/2 teaspoon baking soda
1/4 cup unsweetened applesauce

I really wanted to add in a 1/2 cup of dark chocolate chips but I didn’t have any.

Preheat oven to 325 Degrees F
Mix almond butter, applesauce and eggs together to make a smooth batter.  Mix in the honey and vanilla. Next add the salt, baking soda, and then slowly add in the cocoa powder.

Grease (I also line my pan with parchment paper) a 9 X 9 or 8 x 8   inch baking dish with cooking spray ( I actually have a 6 1/2 X 9 1/2 casserole dish that I use). Bake for 20-35 minutes or until a toothpick is inserted and comes out clean.
