These eggs in muffin cups recipe are the perfect quick breakfast. Some of you might not know but I have the auto-immune disorder, Graves’ Disease. I have found that limiting processed foods, dairy and gluten has made me feel so much better. So my family has been slowly trying out some Paleo recipes. They still want me to make them delicious desserts and pasta….but we are trying!

These simple eggs are a quick and easy breakfast that is gluten and dairy free!

Eggs In Muffin Cups

This eggs in muffin cups recipe is the perfect quick breakfast. 
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients  

  • 1 Pound Sausage
  • 10 Eggs Beaten
  • 1 Bell Pepper Diced (any color)
  • Salt to taste
  • Pepper to taste
Servings: 16

Preheat oven to 350. Grease a muffin pan or line muffin pan with baking cups. Brown sausage in skillet and drain.  Lightly beat eggs and mix in diced bell pepper, sausage and salt, and pepper. Pour egg mixture evenly into the muffin cups. Bake for about 15 or until egg is set. The egg will continue cooking a bit so don’t overcook.  Made about 16 egg cups.

  1. Do you have trouble with these egg muffins sticking to the liners? I may be doing something wrong, but mine just break apart, leaving much of the muffins on the liners.

  2. Amy, have you changed her diet? I would think most 13 year olds would be heavy dairy drinkers. From what I have read (and I am not a doctor or expert) sometimes dairy can bother the thyroid.

  7. I have some arthritis issues as well as had some gastric problems so I started Paleo back in August. I “went off the wagon” in November and December and have struggled with fully committing for about 6 weeks. I went back to Paleo strong this week and the benefits are amazing!     I can highly vouch for the Pumpkin Breakfast Cake! It tends to be overmoist so I add 2 tablespoons of coconut flour to the almond flour and that works great. I use ghee for the fat but have used coconut oil and that works as well. Try it and let me know what you think!

  8. I did the whole 30 earlier (which is super strict paleo…not even honey!) and I found good recipes at nomnompaleo.com and theclothesmakethegirl.com. Melissa has 2 cookbooks (Well Fed and Well Fed 2) that my friend has and she said they were awesome!

    My favorite sub was zoodles! Instead of noodles, just microwave julienned zucchini. I’m going to keep doing that in place of regular spaghetti!

  9. I have found the blogs PaleOMG and Multiply Delicious to be helpful. I have a 4 and 6 year old. Our family has been gluten and dairy free for 3 years. We started this diet change because my husband and children were constantly sick and looked and felt miserable. We are much happier and healthier this way. I use oat flour as a substitute for all purpose flour in cookies. We also love Trader Joes, GF/DF waffles, pancakes, cookies and cheaper GF flour and almond meal. It can be challenging at times but being healthy and feeling good are so worth it! Wishing you success in your dietary adventure!
