Crustless Freezer Sandwiches by Number 2 Pencil

Hello Skip to My Lou friends! I’m Melissa from No. 2 Pencil. Over at No. 2 Pencil, I share creative recipes, crafts, and DIY projects. With back to school in full swing, I thought it would be fun to share one of my favorite lunch tricks with you. These Crustless Freezer Sandwiches are so easy to make, and perfect for popping in the kiddos lunch pails.

Crustless Freezer Sandwiches

Here is what you will need to make these sandwiches:

Soft fresh sandwich bread

Peanut Butter and Jelly, or your usual filling

Straight sided glass

Sandwich size plastic baggies

 

Step One: Spread a small amount of peanut butter on both sides of bread. Make sure you keep the peanut butter inside the diameter of the glass. Place a small amount of jelly on the other side.

Step Two: Use a straight sided glass as a cookie cutter and cut through bread.

Step Three: Remove sandwich from crust. The rim of the glass will seal the bread together. Since there is no peanut butter or jelly on the outer part of the bread, you can save those pieces for another use. They work great for making homemade bread crumbs!

Step Four: Pop the sandwich into a plastic baggie. Press to remove as much air as possible from the baggie and freeze. To pack in lunch, just remove from freezer and place in lunch box. Sandwich will thaw in baggie and be ready to eat by lunch time.
