Be sure to not overbake. Bake until toothpick inserted comes out clean.

Lemon Glaze

While the cake is still warm make a simple glaze out of powdered sugar and freshly squeezed lemon juice. Pour the lemon glaze over the baked cake. Glazing is different from frosting! The frosting is applied to a cake that has been cooled completely!

Serving and Storage

Do not overbake this cake! The cake is done when the toothpick inserted in the center comes out clean. Cool cake in pan for 10 minutes before removing.

Loosen the cake from the sides of the bundt pan with an offset spatula and turn it out onto a wire rack to cool.

Store in an airtight container.

  1. This was the first cake I learned to make as a kid…and still make it today 40 years later. It is delicious!

  2. How long should you let it cool in the pan before removing? I don’t want it to stick.

  3. Great idea, but I still need the éclair cake recipe. I will definitely try this one. I love pudding cakes. I do one in green & brown with half of the batter mixed with pistachio pudding & the other half chocolate.

  4. Does this work with the new down-sized boxes of cake mix, or is it based on the old box size?

  5. Other recipes I’ve found similar to this call for a 3.4 oz box of Lemon Jello *PUDDING*, is it truly 3.4oz of Lemon Jello?

  6. I LOVE lemon cake and I’m so excited to try this recipe but I do have one question. I’m just curious, did you use lemon jello or Jello lemon pudding?

  7. I just put a cake in the oven. I think we are having lemon cake for supper!

  8. I made a really similar recipe for Easter…I think the only difference might have been the use of a yellow cake mix instead of lemon. LOVED it!!! In fact I ate a lot of it this week! YUM!

  9. I love this recipe, we call it “life changing lemon cake” in these parts. We make it a lot in Summer and Spring. It is the perfect cake for Easter, unless you fail to turn it out of the pan in time (because you were hunting for eggs) and it sticks in there and you have to spoon it out in unpretty chunks. Then it is the perfect “day after easter” dessert 😉

  10. Yummy!! love lemon desserts, especially when they are easy 🙂
