Hello friends of Skip to my Lou! I’m Melissa from No. 2 Pencil, where I share original recipes, DIY projects and crafts. I am thrilled to be guest posting here today, and excited to share my recipe for Peanut Butter Captain Crunch Treats. An easy and fun back-to-school treat.
These are a twist on the classic Rice Krispie Treats, with a double peanut buttery flavor punch. I use peanut butter cereal, and peanut butter mixed with marshmallow and butter for a rich and delicious flavor.
First, I want to show you my favorite trick for making these treats. I cut two pieces of parchment paper and lay them across each other. Then when the treats are cool, I lift them out and use a serrated knife to cut them into bars. Note: The stick of butter is just holding the papers in place until my treats are ready to go in. A butter paper weight, if you will.
Slicing them makes for a pretty presentation, and you can wrap them up individually if you prefer.
Oh my, these are ooey, gooey peanut butter heaven.
Peanut Butter Captain Crunch Treats
6 tablespoons of butter
1 bag of large marshmallows – 10 ounces
1/2 cup of creamy peanut butter
7 cups of Peanut Butter Captain Crunch
Melt butter in a large pot, once butter is almost completely melted, add marshmallows. Stir over low heat until marshmallows are almost melted, then add peanut butter. Stir until combined.
Pour cereal into marshmallow mixture and stir until well combined. Pour cereal mixture into 8×8 pan, lined with parchment paper. Use hands slightly dampened with water to press cereal into pan. This will keep it from sticking to your hands.
Let cool, cut with serrated knife and serve.
For an even more decadent treat, try drizzling the top with melted chocolate or white chocolate chips. Heavenly!
