Frozen Peppermint Cheesecake RECIPE

Spray a 9-inch round springform pan with cooking spray. Combine cookie crumbs and melted butter in a medium bowl, and mix well.  Press 2 cups of crumbs firmly partway up the sides and onto the bottom of the prepared pan. Pressing crumbs on the sides of the pan first, then on the bottom keep the crust from being too thick in the corners. Place the crust into the freezer while the filling is made.

Beat cream cheese until fluffy in a large bowl. Gradually add sweetened condensed milk until smooth. Stir in peppermint extract and peppermint candies, and mix well. Fold in whipped cream. Pour filling into pan.

Cover and freeze for at least 6 hours or until firm. Garnish with fudge topping and crushed peppermint candies (or you can use crushed candy canes) A food processor helps with this.

  1. I’ve made this dessert several times and it’s excellent! The filling is light and smooth, more like a mousse than a traditional cheesecake. A perfect dessert following a heavy dinner. It takes no time to make, and after freezing till firm can be decorated and then kept in the freezer till needed. I’ve found that chopped peppermint bark freezes better than peppermint candies and sub chocolate ganache for fudge sauce.

  2. Laurie, You can really serve it straight from the freezer. It is frozen but not too hard and it will thaw a bit while cutting and serving.

  3. Haven’t made this yet but wondering if after freezing, you need to let it thaw a bit before serving or is it ready to go right out of the freezer? And also, you don’t freeze the chocolate topping, right?

  4. Heather, you could, and I have tried this but the homemade crust is amazing and what makes it!

  5. I am all about peppermint right now & this is amazing! Love the oreo crust & the nice, thick cheesecake. The fudge on top ties it all together!
