My Favorite Sandwich

This is my favorite sandwich!

When your garden produces loads of tomatoes and basil……

grab some pesto (fresh if you have it), fresh mozzarella and ciabatta bread. You have all you need for a really yummy sandwich!

Tomato, Mozzarella and Pesto Sandwich

Slice the bread and generously spread pesto on each side. Stack bread with sliced tomatoes, fresh mozzarella and basil leaves. Salt and pepper if you like.

YUM!

This sandwich is also great made with a French baguette. It is also really good with a drizzle of balsamic vinegar!

Wow. I love your pictures of the tomatoes and basil.. I’ve been growing cherry tomatoes and basil in my garden and with a bumper crop, I posted a caprese salad appetizer this week too. Your pictues make my hungry. Yum.

My favorite, too! Except I usually do balsamic or red wine vinegar instead of pesto.

When I was younger our school burned down so there were no hot lunches for us while they were rebuilding. One of the sandwiches my mother would make was a tomato sandwich. We didn’t have the basil or the pesto… but just seeing this took me back to childhood! GREAT photos!

Um…if you have fresh basil, you can make your own pesto…it is AMAZING. We’ve been doing it all summer. Most recipes call for pine nuts…but they are a bit expensive and we’ve found that walnuts work great All you need is basil, garlic, the nuts and parmesan cheese in a blender. YUMM!

If you love that, try the cold-weather version: roast the tomatoes with sliced onions, then grill the finished sandwich, panini-style.
