I froze my extra cream of coconut so I could make some more Irish Cream later.

You also could make this cake. It is so delicious and I don't think you would miss the 2 Tablespoons of cream of coconut.

1 box white cake mix
1 can cream of coconut mix
1 can condensed milk
1 (12 oz.) Cool Whip topping
1 (12 oz.) flake coconut

Bake 9 X 13" cake to package directions. When done, poke holes all over the cake. Mix cream of coconut and milk together, pour over warm cake. Use all of the mixture. Let cool then refrigerate. Put Cool Whip on cake and top with coconut (optional).
