A Recipe For Making Strawberry Fruit Leather

We are lucky to have Marie from Makes and Takes here sharing her special tips and yummy recipe for strawberry fruit leather!

Each Summer, my Mom and I make Apricot Fruit Leather. It's so good and super healthy. Since I posted it last year, someone asked if other fruit could be used. My mom remembers trying other flavors in the past, but always had the best success with apricots. So I decided to take up the challenge of trying some other flavors out. This week it was Strawberries and it turned out great.

I used the exact same recipe from Apricot Leather for the Strawberry. 2 cups strawberries, 2 T. honey, 1 T. lemon juice. Blend, spread, and dry.

I've heard you can dry your leather in the oven at a very low temp, but I love to do it in the sun. I use these old drying racks, but you can use almost anything, as long as the top is covered with holes to let in sun and air, but keep out bugs and dirt. The Strawberry leather took a little bit longer to dry, an extra day, but still delicious. And I don't even notice the little seeds.

Since Strawberry Leather was such a success, I'm on to peach and possibly plum. What fruit have you tried to dry before?

  5. I promise, it really is this easy! The hardest part is waiting for it to dry, as it takes a day or two.

    Marilee – I love the idea of strawberry-rhubarb. We always make a pie out of that, but never thought of it for leather. I’m going to have to try that!!

    Just a normal can of applesauce makes a fabulous fruit leather!! I know it sounds too easy to be true. Just dump your applesauce on a tray and several hours later…YUM! Also, sometimes I add a teaspoon of coconut extract to the applesauce and it makes it taste a bit like pina-colada! Thank you for the other recipes, I’m so excited to try them!

    This looks great and so easy! I’m having a hard time thinking of what else I could use other than a drying rack since I don’t have one. Did you put plastic wrap under and over it? Sorry, I’ve just never tried to make anything like this before, but I would like to try it. Thanks.

  9. Daisy Day – That is a fabulous idea. I’m going to have to try that one too!

    Sheena – I only put the plastic wrap on the bottom. And you don’t have to use screens. I’ve used a baking sheet, but the plastic sometimes gets a little melty from the hot sun on the baking sheet, so put down a silicone mat or some tinfoil before the plastic. And for the top, it’s fine to not have anything. The leather needs the air flow to dry. I only use the screen to keep out the bugs.

    I have done peach (yummiest there is), pineapple and coconut (so so), banana (just like lollies), apple blueberry.
    I can cheat though as i have a dehydrator, so I don’t use the sun, but anything can be dried given the right amount of time.

    As a kid, my step-mom made nearly EVERYTHING into leather (some intentional, some not… usually not fruit, tho! My favorite were peach, nectarine (a bit tangier than peach, as I remember it), Applesauce, Cinnamon-Applesauce and YOGURT!

    Cinnamon-Applesauce was just a jar of applesauce, sprinkled with a bit of cinnamon-sugar before dehydrating. Yogurt was done with a container of yogurt with the fruit stirred up from the bottom (good with Strawberry, and a swirl of strawberry fruit-puree) I loved blackberry yogurt leather!!!

    Oh how I wish I had remembered about making this when I had boxes of peaches quickly spoiling all over my dining room a few weeks ago. Making leather would have been a nice additional method of preserving some of them. I think I will try it with the apples I have now.

And I’d been feeling left out for so long because I didn’t have a dehydrator – hmph! I think I’ll be trying this with last year’s peaches that I froze – we didn’t have much of a peach crop around here this year. Thanks for the recipe!
