I usually always have bananas on hand for banana bread. How am I able to always have perfectly brown mushy bananas on hand? I keep them in the freezer. Whenever I am stuck with that one spotted banana that no one will eat I throw it in the freezer. I have quite a collection (some get pretty ugly and wrinkly but I still use them).
Here are my favorite banana bread recipes. The first one is adapted from Allrecipes. This is a yummy moist bread. The chocolate chips send it over the top!
Chocolate Chip Banana Bread (left side)
1 3/4 cups flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil (or melted butter)
1/2 cup plain yogurt (I have used vanilla flavored in a pinch)
1 egg
1 tsp. vanilla extract
3 ripe bananas mashed (you will notice frozen bananas give off some liquid when they are thawing, I just stir them all up and put them in the batter)
3/4 cup chocolate chips
Combine oil, yogurt, egg, vanilla and sugar in a large bowl. Mix well. Add in flour, baking powder, baking soda and salt all at once. Stir until just moistened. Fold in mashed bananas and chocolate chips. Pour into large loaf pan (or two smaller). Bake at 350 degrees for about 45 minutes (less if you are making smaller loaves).
Now this is my slightly healthier version. It is really delicious too! You don't miss anything with this recipe!
Whole Wheat Chocolate Chip Banana Bread (right side)
1cup white flour
3/4 cup wheat flour
1/2 cup sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt (kosher)
1/4 cup vegetable oil (or melted butter)
1/4 cup unsweetened applesauce
1/2 cup plain yogurt
1 egg
1 tsp vanilla extract
3 ripe bananas mashed
3/4 cup chocolate chips
Combine oil, yogurt, egg, vanilla, applesauce and sugar in a large bowl. Mix well. Add in flour, baking powder, baking soda and salt all at once. Stir until just combined. Fold in mashed banana and chocolate chips. Pour into large loaf pan (or two smaller). Bake at 350 degrees for about 45 minutes until toothpick comes out clean(less if you are making smaller loaves).
Enjoy! Fall baking has begun!

I love this idea. My freezer usually have 6-10 bananas floating around in it. I also love how they defrost fast and you don’t have to mush them because the defrost MUSHY and slimey, but they work GREAT!

That recipe looks yummy, I will have to try it. Just a quick comment from a girl who also freezes bananas and loves banana bread, they are easier to peel if you peel them first, put in a ziploc and then freeze.

We are banana bread lovers too. Try it with blueberries, very tasty. I have frozen rhubarb and frozen blueberries, even frozen grapes for snacking, but for some reason I never thought of freezing my old bananas. Silly me. Thanks for mentioning it

Love having those bananas in the freezer…so easy to whip up some smoothies, muffins, and yummy banana bread! I have 6 loaf pans and love to spend a morning baking for family and friends. I also bake and after the bread cools, I double wrap and freeze a few for quick gifts. I always have a supply and do clean-up only once.
I keep my bananas in the fridge or freezer too. And my FAVORITE banana bread always has chocolate chips on top! Yummy!

My banana chocolate chip muffin recipe is similar to your healthy-fied banana bread. The last 2 times I made them, I accidentally left out the sugar – and the kids still gobbled them up. I think I’ll do it on purpose from now on…
I use the Betty Crocker cookbook recipe and substitute equal parts mini chocolate chips for the nuts. It comes out delish – and we can’t get enough of it!
We’re gonna go make this now. One quick comment on the whole wheat one- you listed egg in the instructions. I think you meant the applesauce. I had to come back online and check to make sure.

Tried you recipe – and LOVE IT!!!!! I used Bread Flour instead of all-purpose or wheat, I only had vanilla yogurt – so I didn’t add vanilla extract, and I only had cinnamon applesauce – but it is super moist and delicious!
