We love smiley pancakes around here!
We are "thinking" about getting back into our gluten free / dairy free diet, so these pancakes are at least dairy free! It's a start anyway...
Dairy Free Pancakes
1 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
1 Tablespoon sugar
1 1/4 cups soy milk (you may use regular milk)
1 tsp vanilla extract
1 egg
3 Tablespoons melted butter
Mix all dry ingredients together in a bowl. Make a well in the center of the dry ingredients and then add the wet ingredients in the well and then mix.
I took a spoon and dripped a smiley face onto the hot skillet. Allow this to cook until you see the bubbles popping and the top looks a little dry.
Next, cover the smiley face with more batter. Cook just long enough for the batter to set so you can flip the pancake. You might have to cook a little longer once you flip your pancake so it cooks through.
There you have it --smiles in the morning!

I love this idea! One of my friend’s moms did this for us when we were kids, but instead of smiley faces, she would write our initials. One of my favorite tips for this, though, is to either use a cleaned out ketchup bottle, or to purchase a condiment squeeze bottle at the store. It makes much neater smileys and letters, and there’s less mess!
